GOOD FOOD.
GREAT HISTORY.

Editorial context

A. R. Annable introduces a collection of preparations for new and older potatoes in the magazine’s Culinary Realm section. The opening emphasizes careful cooking and reflects the period’s concern with digestibility. Its claim about sickness is historical advice, not a modern medical recommendation. The individual potato recipes are separate entries.
