Escalloped Cabbage
Fill a buttered baking dish with alternate layers of finely cut, crisp cabbage and cream dressing, having the latter on top, well covered with fine dried bread crumbs. Bake in a moderate oven about half an hour.
Cream Dressing for the Same
Two heaping tablespoonfuls of flour and four tablespoonfuls of butter rubbed smooth. Pour it into a hot spider or stewpan, and when hot, add very slowly a quart of rich milk, one teaspoonful of salt, and one teaspoonful of pepper. Stir constantly until it thickens and is smooth. Cool before mixing with cabbage.

Directions
Butter a baking dish.
Fill the dish with alternating layers of finely cut, crisp cabbage and cooled Cream dressing. Finish with a layer of dressing.
Cover the top well with fine, dried bread crumbs.
Bake in a moderate oven for about 30 minutes.
Cream dressing
Ingredients
2 tablespoon flour, heaping
4 tablespoon butter, rubbed smooth with flour
1 quart milk, rich
1 teaspoon salt
1 teaspoon pepper
Directions
Rub the flour and butter together until smooth.
Transfer to a hot skillet or saucepan. Once the mixture is hot, add the rich milk very slowly, along with the salt and pepper.
Stir constantly until the dressing is smooth and thickened.
Let the dressing cool before layering it with the cabbage.
